RAJGIRA PARATHA/AMARANTH PARATHA

Amaranth, commonly known as Rajgira, is a widely known millet rich in fiber and protein. 1 cup of cooked amaranth contains around 9 gms of protein, making it helpful especially for those who are looking for weight loss. Its also rich in calcium, containing 116 mg in around 1 cup, hence supporting bone health. Its also a fiber rich grain, and aids digestive health.

Lets see how to make Amaranth millet Parathas and savor the benefits of millets.

Ingredients:

  • ¾ cups Rajgira / Amaranth flour
  • 2 small to medium boiled and mashed Potatoes
  • 1 tsp cumin powder
  • 1-2 chopped green chillies
  • 1 tbsp chopped coriander
  • 2 tsp ginger paste
  • Rock salt to taste
  • Peanut oil/ghee to cook
  • Hot water to knead the dough

METHOD

  • Mix the hot mashed potatoes into the amaranth flour
  • Then add the crushed green chili paste, cumin powder and rock salt .
  • Add chopped coriander and ginger paste. Mix everything well.
  • Add 1 or 2 tablespoons of water in parts and knead to a smooth dough. The addition of water depends on the quality of flour, so add accordingly. Allow the dough to come at room temperature
  • Make a small or medium sized balls from the dough. Dust with amaranth flour.
  • Roll to a small or medium sized paratha. While rolling add some more flour if required.
  • Then gently lift up with a spatula and fry the paratha on a hot tava.
  • Once one side is partly cooked, flip with the help of spatula. Use a non-stick pan or a well-seasoned pan as the paratha might stick.
  • Apply ghee or oil on this side as per your preferences. Flip again carefully using a spatula. Apply ghee or oil on this side.
  • Flip a couple of times till the roti has become evenly golden and roasted evenly. Serve hot.
  • Enjoy with gravy of your choice or curd.
